Super Mario Kart with the Kinect
This might be the first game using the Kinect that doesn't depend on the Xbox. Netpro2k (who wrote the 3D object manipulation code) has just uploaded a video showing how he plays Super Mario Kart using the Kinect on his Mac OS X computer.
As you can see, depth information is used to detect the position of both hands as well as the position of the leg. These inputs are then mapped to keyboard keys to be used as input in other applications: in this case an SNES emulator running Super Mario Kart. The source code is not available yet, but should be soon.
